Watermelon, feta and mint salad

When the temperature soars, few dishes are as refreshing as this watermelon, feta and mint salad. The sweet, juicy watermelon, feta and fresh mint make the perfect combination for a heatwave – light, cooling and ready in minutes. It’s also a healthy way to hydrate because of the high water content of the watermelon together with the salt of the cheese.

Whether you’re serving it at a barbecue or enjoying it as a simple lunch or starter, it’s summer on a plate.

You don’t have to arrange the ingredients in a chequerboard pattern but it does look pretty, especially if you’re entertaining. To get a reasonably accurate design simply measure the width of the feta and cut the same size slice of watermelon. Then line up both the feta and watermelon to slice together in equal squares. It’s easiest to do this with a large, sharp knife.

Sprinkle over chopped fresh mint just before serving.

  2. Crumbling is also good! I often use a bit of crumbled feta on a dish as a bit of extra seasoning.
