This has become my go to recipe for a really quick and easy baked fish dish. I found it online but have copied the recipe here for convenience. I’ve since made this with sea bass but any white fish would go well. I found a pack of orange and red tomatoes which made it look even more colourful. This makes a low fat, healthy dinner – I love its sheer simplicity.
Serves 2.
Ingredients
- 2 fillets of cod
- 1 tin of chickpeas, drained
- Pack of cherry tomatoes
- 2 cloves of garlic, chopped
- 1 red chilli, chopped
- Teaspoon of smoked paprika
- Tablespoon of chopped parsley
- Drizzle of olive oil
- Salt and pepper
Method
- Pre-heat the oven to 190C fan.
- Put the chickpeas, tomatoes, garlic, chilli, paprika in an oven proof dish. Drizzle with the olive oil, mix well and bake for 10 minutes.
- Place the cod on top, season with salt and pepper and bake for another 10-15 minutes or until the cod is cooked. Scatter with parsley and serve.
