Smoked fish salad

With the World Cup in full swing my current priority is to get straight down to watching TV as soon as I get home from work, so cooking has taken a bit of a back seat. I have a  few home frozen meals for easy prep – some turkey and sweetcorn meatballs eaten cold with roasted red peppers and a chilli sauce dip for example. Or I’ll go with easy salads like a chicken Caesar salad or a quick tray bake and dip like my spicy pea dip with smoked paprika vegetables.

But yesterday was the Summer Solstice so I thought I should choose something a bit special with a Scandinavian twist (where mid summer is a festive occasion) so I rustled up a smoked fish salad. I chargrilled strips of courgettes to mix with boiled new potatoes and mayonnaise as a base for smoked salmon and smoked mackerel. I packed masses of dill into a mustardy vinaigrette dressing and finely sliced peeled cucumber and radishes.   Delicious.

The best part of the long evening was watching Argentina lose 0-3 to Croatia. I love the World Cup!
